Meal Prep: Baked Blueberry Oatmeal & Stuffed Peppers

Hi, hello, good morning/afternoon/evening!

Okay, so this week I tried some new things, and I have to say, they turned out extremely well!

I love oatmeal but cold oatmeal is sad, so I tried a blueberry oatmeal bake and, let me tell you, it hit the spot!

It’s cake-like, but super low in calories and really delicious!

For lunch, I wanted something hamburger-like but I didn’t want a hamburger or handheld anything because it would likely get soggy in my lunch bag, and I didn’t want to eat sadness for lunch so I opted for a stuffed pepper with quinoa on the side.

Breakfast – Blueberry Oatmeal Bake with Greek Yogurt and Sugar-Free Syrup

                I split the blueberry oatmeal bake into 6 portions, but I think 4 portions would have been better. It just wasn’t enough food, and I was starving by lunch time.  I added Greek Yogurt and sugar-free syrup. This can be very sweet, so next time I’d add less sugar or just not include the sugar-free syrup.

Breakfast Calories

Blueberry Oatmeal Bake (6 portions) – 254 calories

½ cup of Greek Yogurt – 70 calories

2 Tbsp of sugar-free syrup – 15 calories

TOTAL CALORIES – 335 calories

Lunch – Stuffed Peppers with Quinoa

                This recipe was super easy. I used ground chicken but turkey or beef are perfect alternatives if that is your preference. It surprised me how low calorie this meal was. Initially I had packed the pepper with a side of cucumbers and orange slices, and it was nowhere near enough food! I think it was floating close to 300 calories total and I was starving an hour later, so I added quinoa and it helped me feel fuller.

Lunch Calories

Stuffed Peppers – 245 calories

¾ cup of cooked quinoa (1/4 cup uncooked) – 180 calories

½ cup of sliced cucumbers – 9 calories

Small navel orange slices – 45 calories

TOTAL CALORIES – 480 calories

                Once I made the necessary adjustments, these meals kept me full and satisfied all day! No need for sad gym-bro food here! These are tasty and will make you excited for meals!
