Baked Blueberry Oatmeal
If I can cook by shoving something in the oven and walking away, I will do it.
Oven meals are my favorite because, although they may require some more prep, they are hands off, and best of all, I can do other things while it’s baking!
I don’t often have the luxury of a hot breakfast, mostly because I make zero time for it in the morning.
I made a version of this baked oatmeal years ago and thought I’d give it another go. I’ve been incorporating zero-calorie sweetener into my recipes, and this was a great opportunity to try it. However, I never want to sacrifice flavor. You won’t find any gym-bro high protein meals of sadness on this website!
In the end this was a bit sweet for me, but I have a lower tolerance for sweetness than most people. Ironic since I’m a baker.
For this recipe, you dump everything into a bowl, give it a good mix, and bake it until it’s golden and toasty! I added some Greek Yogurt and Sugar-free Syrup on the side. It worked super well together!

Baked Blueberry Oatmeal
Ingredients
2 cups of rolled oats
¼ cup of brown sugar
¼ cup of monkfruit sweetener (or preferred sugar replacement)
3 Tbsp of chia seeds
2 Tbsp of cinnamon
1 tsp of baking powder
½ tsp of salt
¾ cup of milk
2 Tbsp of coconut oil, melted
2 eggs
1 tsp of vanilla
¼ cup of chopped walnuts
2 cups of blueberries
Directions
1. Pre-heat oven to 350 degrees F.
2. In a large bowl, combine rolled oats, brown sugar, monkfruit sweetener, chia seeds, baking powder, and salt. Give a good mix.
3. Add milk, melted coconut oil, eggs, and vanilla.
4. Fold in walnuts and blueberries.
5. Spray an 8 x 8 baking dish with cooking spray and pour in mixture. Make sure it’s spread evenly.
6. Bake for 30 – 35 minutes or until it’s golden and crispy.
7. Serve with a dollop of Greek Yogurt and enjoy!
