Curry Chicken Salad AKA “Coronation Chicken”
English-style afternoon tea is one of my favorite activities. I never had tea parties as a kid, but I leaned into them hard as an adult.
I love tea, but what’s better than the tea? The tea-time snacks!
This chicken salad is found on many English tea house menus in sandwich form. According to my research, it was named Coronation Chicken because it was conceived in celebration of Queen Elizabeth II’s coronation.
This tasty chicken salad can be served on bread, crackers, lettuce cups, or tortilla wraps. I piled mine onto some homemade bread with some fresh spinach.

Curry Chicken Salad or “Coronation Chicken”
Ingredients
1 Tbsp of vegetable oil
1 Tbsp of chopped shallot
1 Tbsp of yellow curry powder
1 cup of chicken stock
1 Tbsp of tomato paste
½ tsp of brown sugar
½ tsp of salt
½ tsp of pepper
1 cup of mayonnaise (Greek yogurt also works)
2 cups of shredded chicken
Sprinkle of slivered almonds
Directions
1. Heat oil in a pan and cook chopped shallot for 1-2 minutes.
2. Add curry powder and mix.
3. Add chicken stock and let reduce for 1-2 minutes.
4. Add tomato paste and mix until dissolved.
5. Add brown sugar, salt, and pepper.
6. Mix and let bubble. 2-3 minutes.
7. Pour mixture into a bowl and mix in mayonnaise.
8. Add shredded chicken.
9. Add a sprinkle of slivered almonds for a nice crunch.
10. Refrigerate.
11. Serve on bread, crackers, tortilla wraps, or lettuce cups.
