Blueberry Banana Bread
I regularly make banana bread because I can never eat the whole bunch of bananas before they go bad. Making banana bread keeps me from wasting food and I love mixing it up with different additions like fruit or oatmeal.
The tartness from the blueberries is a perfect contrast to the rich banana bread. This recipe is made with fresh blueberries, but I’ve done it with frozen berries too! Your bread might turn blue with the frozen berries, but it looks and tastes just as delicious!
Blueberry Banana Bread
Ingredients
2 cups flour
1 tsp baking powder
1 tsp cinnamon (I used like 4. Measure with your heart!)
1 tsp baking soda
1 tsp salt
1 cup sugar
½ cup unsalted butter (1 stick)
2 eggs
2 tsp vanilla
3 bananas, mashed
1 ½ cups of fresh blueberries
Directions
1. Preheat your oven to 350 F.
2. Combine all dry ingredients: flour, baking soda, baking powder, salt, and cinnamon.
3. In a separate bowl, combine butter and sugar.
4. Add in the eggs and mix.
5. Add vanilla.
6. Mash bananas and mix them into the wet ingredients.
7. In two parts, combine the flour mixture with the wet ingredients.
8. Gently fold in blueberries with a spatula. If they pop, you’ll get a fun blue color!
9. Spray a 5x9 loaf pan with cooking spray and pour in the batter.
10. Bake at 350 for about an hour, or until a toothpick comes out clean. Mine was in the oven for an hour and 5 minutes.
11. Let cool in the loaf pan for about 10 minutes, then pop it out and let cool on a cooling rack.
