Easy Chicken Bruschet

    This has been my fixation meal for several weeks because it is so hot outside and this chicken bruschetta is easy and refreshing! The most simple foods are often the most delicious an this one does not disappoint with seasoned chicken, juicy heirloom tomatoes, basic, garlic, and plenty of olive oil.

                I paired my chicken bruschetta with some toasted baguette, but I’ve also tossed the chicken and bruschetta into some pasta. This is easily customizable.




Easy Chicken Bruschetta

Ingredients

3 thinly sliced chicken cutlets

1 Tbsp salt

1 Tbsp black pepper

1 Tbsp Italian seasoning

1 Tbsp Dried Oregano

1 Tbsp Garlic powder

1 Tbsp Onion Powder

2-3 heirloom tomatoes

2-3 garlic cloves, crushed

1 cup of chopped basil (or as much as you want)

Sprinkle of Dried oregano

Salt & Pepper

½ cup of Olive oil

Directions

1.       Mix the seasonings together and then evenly coat the chicken cutlets until covered.

2.       Coat an oven safe dish with olive oil, place chicken in dish, making sure they’re evenly spaced.

3.       Bake at 400 degrees Fahrenheit for 25 minutes, flipping halfway.

4.       While the chicken is baking, chop the tomatoes, basil, and garlic.

5.       Sprinkle tomato mixture with dried oregano, salt, and pepper.

6.       Coat with olive oil and then mix.

7.       I sprinkled some mozzarella cheese onto my chicken before covering in the delightful bruschetta mixture!

This is so good! You’ll be making it constantly!
