Cinnamon Crumble Coffee Cake

I often say that a cup of coffee is just an excuse to have a pastry, and so is the case with this delicious Cinnamon Crumble Coffee Cake.  

This came together easily, I got to have a delicious slice with a cup of coffee, and then I got to give the rest away to a friend to enjoy. Craving satiated and I didn’t have a whole cake lying around to tempt me.

Cinnamon Crumble Coffee Cake

Ingredients

For the Filling For the Topping

4 Tbsp softened butt4er 5 Tbsp softened butter

2 Tbsp cinnamon 2 Tbsp cinnamon

½ cup flour ¾ cup flour

½ cup brown sugar ½ cup brown sugar

For the Cake

2 cups flour

2 tsp baking powder

½ tsp salt

½ cup softened butter

¾ cup sugar

1 tsp vanilla

2 eggs

¾ cup Greek yogurt

¾ cup milk

Directions

1.       In a small bowl, mix together the ingredients for the filling using a fork or pastry cutter. Set aside.

2.       In another small, bowl do the same with the ingredients for the topping. Set aside.

3.       In a medium bowl mix together the flour, baking powder, and salt.

4.       Finally, in a large bowl mix together the butter and sugar.

5.       Add the vanilla and eggs.

6.       Mix in Greek Yogurt and milk.

7.       Line a 9 x 9 baking sheet with parchment paper and pour in ¾ of the batter in. Use an offset spatula to create an even layer.

8.       Distribute filing evenly.

9.       Add remaining batter and top with topping mixture.

10.   Bake at 350 for 55 – 60 minutes, or until a toothpick comes out clean.
